Dominique Loiseau was awarded a Master in biochemistry/microbiology in 1975 by the Université Louis Pasteur in Strasbourg, and then turned to teaching. She taught at the Lycée Technique Hôtelier Jean Drouant, in Paris (14th arrondissement), from 1978 to 1985.
During this period, she sat a vocational certificate in cookery in 1983 in order to be better equipped to deliver the very specialised syllabus her students required.
Following the publication in 1981 of her first book, Hygiène et restauration (Editions BPI), the professional journal L'Hôtellerie started to approach her for articles. Her work with the journal marked a turning point in her career, as Dominique Loiseau was to join the journal, as a journalist and writer specialising in food products /health foods/food safety. She stayed with the journal for five years.
In 1986, at a professional event in Vichy, she met a young Michelin-starred chef who would change her future for ever and whose name she took in October 1989. Some months after the birth of their first child, Bérangère, she joined her husband Bernard Loiseau in Saulieu, to help him manage his hotel and restaurant ‘La Côte d’Or’.
When she joined him in 1990, she was in charge of the hotel, communications and publishing. She also played a role in the refurbishment, especially the design of the English garden, the boutique (1995), the hotel (the refurbishments in 1995 and 1998) and the spa.
In 1998, Dominique Loiseau was appointed member of the Board of Directors of Bernard Loiseau SA at the listing of the company on the stock exchange.
Once the renovation of the Relais & Châteaux was complete, just days after Bernard Loiseau had passed away on 24 February 2003, Dominique Loiseau was appointed CEO of Bernard Loiseau SA by the Board of Directors.
Since 30 June 2004, she has been CEO of Bernard Loiseau SA. From 2005 to 2013, Dominique Loiseau was appointed Vice–President of the Relais & Châteaux Association, chaired by Jaume Tàpies. She was the first woman ever to hold this post. She is also Vice-President of the competition for Best Worker of France, in the areas of Maître d’hôtel, service and arts of the table.
Dominique and Bernard Loiseau have had three children: Bérangère (1989), Bastien (1991) and Blanche (1996).
Bérangère studied for a Baccalaureate in literature (Greek and Latin). Then, she received a master in management in Paris and has enjoyed several placements in Asia and the United States.. She is also a member of Le Club des Croqueurs de Chocolat and is extremely interested in the whole hotel and culinary universe.
Bastien, after having completed his scientific baccalaureate "mathematics" with grade: "Bien", has graduated at the hotel school in Lausanne. He is actually taking responsabilities in the Frères Blanc group in Paris.
The last child, Blanche, intends to take up pastry once she has completed her baccalaureate, and enjoys participating actively in the activities of the Relais Bernard Loiseau.
