- on the one hand, Relais Bernard Loiseau (Saulieu), with a staff of, on average, 65 people ;
- on the other, the three restaurants –Loiseau des Vignes (Beaune), Tante Louise and Tante Marguerite (Paris), with a staff of more than fifty people.

These loyal, attentive and highly-professional teams play a role, on a daily basis, in building the reputation of the Bernard Loiseau group.
