The new Japanese address opens its doors at the French Institute of Japan (IFJ) in Tokyo. Directly dependent on the French Embassy, the IFJ works to share the French language and culture. The IFJ building underwent a spectacular extension in 2021, designed by architect Sou Fujimoto, who imagined the premises as a French-style village around a lush garden. Located on the outskirts of the Kagurazaka French Quarter (close to Iidabashi station), this new bistro Loiseau has set itself the mission of celebrating French culinary culture within the IFJ.
There is a strong relationship between Bernard Loiseau and Japan. From 1992 to 1995, Bernard Loiseau opened a replica of his restaurant "La Côte d'Or" in Rokko Islands, Kobe, in the Kansai region. His cuisine, centered on powerful flavors and purity of taste (little fat, little sugar, deglazing sauces with water...), met with an exceptional response from the Japanese.
Blanche Loiseau, who has worked in Japan for a year in 2019 - 2020, before taking on her first role as chef at "Loiseau du Temps" (Besançon) is now in Japan to open "Loiseau de France".
