A real link between Burgundy and Franche Comté, "Loiseau du Temps", whose name evokes the clock-making know-how of Besançon (called the City of Time), is located on the first floor of the superb listed building, called "Le Conservatoire". Throned on the Place de la Révolution, and bordered by the Doubs, this building was successively a former granary, a clock-making school, and finally the regional conservatory.
The wood, a hallmark of our establishments, can be found in the furniture and on a moving wall composition, which evokes the passing of time. Vestiges of the old granary, the vaulted ceilings give a masterly dimension to the restaurant, and welcome the exceptional luminosity of the place.
