The Chef
After more than forty years as guarantor of the house's culinary heritage, Patrick Bertron has passed on his unique signature of "purity of taste" to his right-hand man Louis-Philippe Vigilant.
After fourteen years with the group (six with Patrick Bertron in Saulieu and eight as starred chef of "Loiseau des Ducs" in Dijon), Louis-Philippe Vigilant's mission is to continue the house's culinary heritage and develop it further. He is now the guardian of the Loiseau signature: straightforward, distinctive tastes, gourmet sauces and exceptional, uncompromising products, firmly rooted in their terroir.

"Loiseau des Sens " strives to feature market and local cuisine. The majority of products are organic and local, selected from producers and breeders in the region.
